Kubo Sushi and Sake Lounge

I own 2 restaurants. I have been to Michelin Rated restaurants, including 2 rated sushi restaurants. One was in Chicago the other was in Thailand. I have been around the block when it comes to food and sushi. No one, and I mean NO ONE is doing sushi like this in a little suburb an hour outside of Chicago. This is, in my opinion, as good, if not better, than the Michelin Rated places. Over the last 3 weeks I have explored their menu and I have yet to find something that wasn’t made thoughtfully and with care. I talked to the Chef and he says he buys whole fish and breaks them down, and you can taste the difference. I was lucky enough on one visit to experience Salmon Belly Nigiri. The best bite of nigiri I have ever had. It’s not normally available he said, which is fine. Too much of a good thing as they say. The cuts of fish for his sashimi or nigiri is generous but not too much at the same time. Kubo needs a visit from Michelin or a major publication. The world needs to experience real sushi, made with expert hands, with the utmost care. Kubo isn’t just a Sushi Place. Kubo is Kubo as Nobu is Nobu. I said it and I will stand by it. (Yes, I’ve been to Nobu and Kubo is better)
